Gin Chicken

1999 - For the last year we've been looking for a recipe that used gin. It's easy to find recipes with brandy, scotch, whisky, beer, almost any other liquor (except Slivovitz, but who even drinks that stuff?). Up at the CIA the other day I challenged our tour guide and she responded with this. I made it the other night and it is pretty damn good.

A. chicken breasts 6 remove skin
gin 1 cup  
lemon juice 1 lemon  
red onion 1 chopped
basil, dried 1 teaspoon  
water 1 cup  

Combine all ingredients in a bowl and allow to sit for 30 minutes, no longer!

Grill the chicken until just done.

Saute the remaining marinade - be sure it comes to a boil - until the juice thickens.

Pour over the chicken and serve.
