Cobbler - Yum!

adapted from SF Flavors, recipes from the Junior League

February 2009 - She was out of town and Dina had me over for marinated tri-tip, asparagus potatoes, and this fantastic cobbler. I made it for Carson and Edi and we loved it.

Cook time: 45 minutes
Oven: 375 degrees
Serves 6

A. strawberries 4 cups  
mangos 3  
sugar 0.5 cup  
  cinnamon 0.5 teaspoon  
  flour 2 tablespoons  

Remove the stems from the strawberries and cut them into quarters.

Slice mango from the seed and fillet off the skins. Cut the mangos into pieces the same size as the strawberries.

Mix the fruit with the sugar, cinnamon, and flour.

Pour into a 9x13 inch pan. (Don't use a smaller pan or the cobbler will overflow in the oven!)

B. flour 2 cups  
sugar 2 cups  
salt 1 teaspoon  
  eggs 3 At room temperature.
  butter, unsalted 0.75 cup Melted.

In a small bowl, beat the eggs.

In a large bowl stir the flour, sugar, salt together.

Mix in the eggs. The dough will be very sticky.

Spread it over the top of the fruit mix. Pour the melted butter evenly over the dough.

Bake 45 minutes, until the dough topping is just starting to brown. Remove from oven and allow to cool for 15 minutes.

Serve with vanilla ice cream.
