Gin Chicken

For the last year we've been looking for a recipe that used gin. It's easy to find recipes with brandy, scotch, whisky, beer, almost any other liquor (except Slivovitz, but who even drinks that stuff?).  Up at the CIA the other day I challenged our tour guide and she responded with this.  I made it the other night and it is pretty good.

• 6 chicken breasts
• 1 cup gin (good gin)
• juice of one lemon
• 1 red onion, chopped
• teaspoon of dry basil
• 1 cup water

Combine all ingredients in a bowl and allow to sit for 30 minutes, no longer! Grill the chicken until just done. Saute the remaining marinade until the juice gels. Pour over the chicken and serve.
